Bubbly Time

The famous bubbly was invented 350 years ago by Christopher Merret, a British scientist, when he noticed

that English wine coopers had begun adding sugar and molasses to wine to make it “brisk and sparkling.” Merret’s recipe for this fermentation process predates French monk Dom Pierre Perignon’s influential discoveries by more than 30 years.
